The vintage
Around 350 mm of rain fell this year, which makes it probably one of the driest years the Struma Valley has ever seen. The winter was mild, similar to 2024, but the spring started more slowly this time, with chillier temperatures until the end of May. It was so different from the last few years that we didn't realize it was actually a normal spring. In June, the hot and dry summer hit in full force and, except for one good rain in July, kept it like that till the end of September. We met this vineyard in early July, when Emil saw it listed for sale. Turned out the guy didn't spray it with herbicides and used only copper, so we decided to buy a small quantity to test how it will turn out. The grapes were picked very early for a Broad-leaved Melnik because we noticed they started to loose it's acids.
Vinification

The grapes are destemmed and crushed. The berries cold soak for about 30 hours before pressing. Then the temperature of the inox vessel is set at 15 degrees and the juice ferments for about 2-3 weeks. After the fermentation ends, it stays about 7 months on the lees with 5 batonnages done during the first 2-3 months.
